3 Things I Currently Enjoy (Food)

Here are 3 things I am currently obsessed with food-wise...

1. Nature Valley Granola Thins - Dark Chocolate

Okay, this is what I've been eating when I want something to satisfy my sweet craving. It hits the sweet spot perfectly for me.

2. Oregon Chai Latte

Pour me a cup of the concentrate and milk on ice. Yummm...

3. Julian's Belgian Waffles

This is an obsession that is yet to be satisfied. I had this when we visited our friends at Turlock. They served it for breakfast. O.M.G! I fell in love with it. They bought it at their local Costco. Unfortunately, it isn't available at our local Costco yet. I've filled out that suggestion form a few times already, asking them to carry it. Nothing yet. I will continue to hound them. Stay tuned!

Jaime Oliver: Teach Every Child About Food

I am inspired by this. I admire his enthusiasm and I sincerely hope his project takes off successfully.
We home cook most of our meals. I've been trying to cook using healthier methods like baking and roasting and cutting back on the frying. I'm trying to introduce more vegetables into our table. But I want to learn more. I want to learn more simple and healthy yet delicious dishes that I can cook up for my family. A friend of mine said that she just got Jaime Oliver's new cookbook at Costco. Will have to check that out and see if his recipes do indeed pass our palates.

40 days

We drove up north over the weekend to be with DH's family. It's been 40 days since his uncle's death. It is a common practice among Filipino families to come together for prayers and mass 40 days after the death of a loved one. Does anyone know of a similar tradition in other cultures? I'm just curious.

Of course, as with any Filipino family gathering, food was abundant during the weekend. It did not help that the widow enjoys cooking so she prepared adobo and kare-kare for the luncheon plus cassava cake, tupig and fruit salad for dessert. On top of that, her daughter, who is a pastry chef , baked cookies and hopia, prepared thai tea ice cream and made mango polvoron and langka & coconut polvoron and cashew brittle. Everything was soo good that it was soo bad (for me!). By mid-afternoon, an aunt and I were discussing adipex diet pills to counter the binge eating we had just done. Haha.

And the yumminess does not stop there. My aunt gave me 2 bottles of lemon marmalade that her daughter had made from lemons they harvested from their backyard. I had it for breakfast this morning of course! And it is sooo good. Yum! What a delicious way to start my day!

Menu Plan for Nov. 22 - 28

Have not shared our menu plan for a long time. Here's what we're eating this week - what are you cooking?

Sunday (Nov. 22)

I got the recipe from Connie at pinoycook.net. I'm finding myself borrowing more and more of her recipes. I did not follow this recipe to a T. What I took from it was her easy version of the white sauce. She uses cream cheese + cream + grated cheddar cheese. sounds good and easy, no? I like cooking lasagna but creating the bechamel sauce can be time consuming, accdg to my standards. Yummy!

Tuesday (Nov. 24)
Roasted Pork Loin with Roasted Garlic Vinaigrette

(Photo originally uploaded by dulamae) I got this recipe from Giada de Laurentiis over at Food Network. I love this recipe. The tanginess of the vinaigrette complements the saltiness of the pork loin perfectly. My mouth is watering just thinking about it. I cooked this while my brother was here and did not really care for the vinaigrette. I teased him that it was for more refined palates! LOL! Aside from the smell, I seriously love the aroma the fresh garlic gives. Mmmmm...

Wednesday (Nov. 25)
Baked Pork chops with Mustard & Yogurt

Another PinoyCook.net recipe. This will be my first time to try this so I have yet to give the official "verdict." I think the kids will like it. Not sure if the hubby will be too happy with the cream cheese/yogurt combination. He's not too fond of creamy sauces. But if I keep the sauce on the side and not smother the dish, I think we'll be good.

Thursday (Nov. 26)
THANKSGIVING!!
We're going over to our friends' house for this evening. They're taking care of the main courses. I'm bringing 2 desserts: Chocolate pecan pie & Chocolate Cheese pie. See the recipe for the cheesecake pie here.

Friday (Nov.27)
Chicken 1-2-3

Yeah, yeah...another pinoycook.net recipe... I'm not too obsessed now am I? I find that we like similar taste profiles so when I want to jazz up our menu, I find that I turn to her website for new recipes that are still familiar, in a way. This one's pretty easy to make too which is exactly why I'm cooking it this Friday. On this great shopping day, I don't want to stress over mealtime. LOL!

Saturday (Nov. 28)

Manny's the Man!

I know this post is super late given that the boxing match between Manny Pacquiao and Miguel Cotto happened almost a week ago. Just wanted to say how happy we all are that Manny won. But happier still that it was a good fight. Both fighters did their best, no theatrics that often come with the bloated egos of well-moneyed champions. I liked both fighters' demeanor. Both seem to have good sensibilities within them. If only Manny could keep that sensibility to his affairs outside of the ring. Last I heard, he was planning to throw his hat into the dirty world of politics. In fact, he had run and lost already in the previous elections in the Philippines. I read in newspaper columns that many are speculating that he is having an affair with a much-younger actress who graduated from my alma mater. Eek! I hope it's not true. If he can maintain discipline in the ring, he should be able to maintain discipline within his marital relationship, right? I just feel that once he compromises a little bit of himself, the slide down would easily happen and before you know it, he could be facing drug rehab.

Anyway, back to the fight, we watched the fight at the house of a friend who was hosting the potluck. I brought a soup (it was more of a stoup: stew+soup) that was a BIG hit. It's called Green Chicken Enchilada Soup and I got the recipe from Molly aka biograffiti who is a new template designer over at ScrapArtist. Everyone loved it and it was super easy to make too.

Just throw these into a big pot:
 a whole roasted chicken(shredded),
1 bag frozen sweet white corn,
2 8-oz cream cheese blocks,
2 jars green salsa,
2 cans pinto beans,
2 cans black beans,
2 cans diced tomatoes with jalapeno (drained),
3 cans chicken broth.
Heat thoroughly and serve with tortilla chips. Mmmmm... There is a kick to it so the kids did not like it at all. I'll probably try it without the jalapeno and see if that will make it ok for the kids. This makes a HUGE batch but lends itself well to freezing so you can have half for dinner and reserve the other half for another time.

LP: Snack

As soon as I found out the theme for this week, I knew I would have pictures to share. I was not prepared to find that I had TONS of snack food pics. I decided to just pick 4 of our family's faves otherwise, we might all get snack food overload and have to reach for diet pills like apidexin to keep us from gaining weight! LOL!

Let's go from left to right, first picture is that of chocolate almond laceys. Mmmm...yummyness to the max. These are 2 almond brittles with dark chocolate in between to bind them together. Second picture is a stack of peanut butter cookies and a glass of milk. Third is cheese popcorn. Can never go wrong with cheese popcorn with my kids. The best part would have to be licking off the cheese that has coated your fingers. Mmmm... Last pic is melon juice. My kids absolutely LOVE this, especially the melon "noodles" as they call it. Refreshing!

Are you hungry yet?

Hehehe... At ang huli ay ang melon juice. Naku, gustong-gusto yan ng mga anak ko.

Ano, nagutom ka ba?}

LP: Almusal at Tanghalian (Breakfast & Lunch)

Ayus!

{This is my entry for last week's theme: breakfast. This really isn't the normal breakfast we have. In fact, I associate this with Christmas. This isn't the ordinary hot chocolate that you just add hot water to. This is the honest-to-goodness real deal that you have to cook from its tablea form. It requires more work but is sooo worth it. Have it with pandesal and butter. Dip the pandesal into the hot chocolate and savor. Yummy!}
Hehehe.

{For this week's theme of lunch, I want to share this photo of my favorite lunch ever. DH and I have this special place we enjoy going to because they have an all-you-can eat lunch sushi special. When we're in the mood for some sushi, this is where we go. Oftentimes, we skip breakfast altogether and just go straight to this sushi lunch.}

Chocolate Heaven

Janet Phillips over at the dailydigi.com shared an easy chocolate cake recipe a week or two ago which she, in turn, had gotten from the everyday celebrating blog.

It only takes 5 minutes!! 5 minutes to chocolate lusciousness.

This is dangerous. Definitely dangerous for me. I like my cooking to be quick and easy. The only reason I don't bake cakes a lot is because it takes too much time and I don't have a lot of that. But with this, I will seriously need the best of the best diet pills ever! Oh my goodness!

I have not actually tried it so I cannot attest to the yummy factor of it personally. I wanted to do it this morning so I could also take a pic but looks like I ran out of cocoa. Hmp!

Here's the recipe:

4 tablespoons of flour
4 tablespoons of sugar
2 tablespoons of cocoa
1 egg
3 tablespoons of milk
3 tablespoons of oil
3 tablespoons of chocolate chips (optional)
A splash of vanilla extract
A coffee mug

1. Add dry ingredients to mug and mix well.
2. Add the egg and mix thoroughly.
3. Pour in the milk and oil and mix well.
4. Add the chocolate chips (if using) and vanilla extract and mix again.
5. Place the mug in the microwave and cook for 3 minutes at 1000 watts.

Don’t be alarmed if the cake rises over the top of the mug!

The blog suggests letting it cool, taking it out of the cup, cutting it in half, put in a plate and top with whipped cream, some berries and more chocolate chips. That would be nice too. But I think eating it straight from the mug would be just as awesome! LOL!

Yummy Chow at Yang Chow

You may notice that I am now blogging about the specifics of our "staycation". If you want the summarized version, you can scroll on down and read my summary.

We had a late lunch at Yang Chow in Chinatown in Los Angeles on Day 1. This restaurant came highly recommended by my good friend T and I 100% trust her palate! And we were not disappointed at all!

Pictured here is the slippery shrimp which is an absolute must-have. It is crunchy with a citrusy kind of sauce. There is a slight tinge of heat which is bearable but gives the dish a kick.

I also enjoyed the lamb with scallions. The thin slices of lamb was super tender. It was just really delicious.

Other dishes we ordered were Yang Chow fried rice (good!), Fish fillet with black bean sauce ( DH found it a bit salty but I liked it!), Hot spicy bean curd (we ordered it not spicy so the kids could have some but I think I would've enjoyed it more had it been spicy), Baby green cabbage with black mushrooms (a simple veggie dish that you would expect from a chinese resto).

I think it's a good thing that this place is quite a ways. If it were nearer and we frequented it more often, I would definitely need weight loss supplements because there is no doubt that I would be eating a lot of their food!! I read that there are other branches too but this one in chinatown is said to be the best.

My friend, T has some more dishes she recommends. I guess that means that we will have to come back at another time to try her other suggestions. Hmmm... who wants to come visit us so we have a reason to stuff ourselves again? LOL!

Like a Summer Picnic

We had a scrumptious summer dinner last night.

Chili dogs. Orange Julius. Ice cream sundaes.

And the best part of it was that it was all homemade! A diner-type meal at a fraction of the cost. At the end of the meal, DD1 exclaimed, "This was a really special dinner, wasn't it, Mommy? It's sooo good!"

Yup, that's all I needed to hear. It may have been easier to grab the same type of meal at a fastfood restaurant but what's the fun in that? The kids enjoy having these "fun" meals at home once in a while. They think it's such a treat to be able to eat hotdogs at home for dinner! It was "fun" for me too because the whole meal cost nowhere it would have cost to feed 8 people if we were out at a fastfood. Plus, plenty of leftovers were available for lunch today.

For the chil dogs/hot dogs, we used BallPark bun size dogs & hotdog buns, both of which were on sale at Vons. Woohoo! For the chili, I used Interstate Chili by Sunny Anderson from Food Network. I've been looking for a beanless chili recipe and this looked really good. I love this recipe and it's something I would definitely use again and again. Just a word of caution on the dish's spiciness. My kids don't do spicy so I held off the jalapenos, the hot sauce and the chili sauce. Against my better judgement, I added half of the cayenne specified in the recipe. It still turned out too spicy for the kids. It was just the right amount of heat for the grownups but I would nix the cayenne altogether next time for the sake of the kids.

I got the Orange Julius recipe from the blog Baking Bites. This really tasted authentic! I remember the Orange Julius stand in Unimart in Greenhills where my mom did her grocery shopping. I remember that as a child, the Orange Julius was a wonderful treat for me. I'm glad I found this recipe because my kids seem to think it's a wonderful treat for them too. :)

Hope you had a wonderful weekend too!

Domestic Diva

I baked some chocolate chip muffins yesterday - from scratch! Yes, this was not from a box or a pouch...pat myself on the back. I actually found the recipe on the web a few weeks ago and thought that it seemed pretty simple. I've been meaning to make some but it was only yesterday that I finally got down to it. I needed a dozen baked goodies to bring for DS' scout requirement so might as well try this recipe.

Thank goodness it turned out well. I like the muffin texture as opposed to the spongy texture of a cupcake. This was most definitely a muffin. And I loved that it was so simple to make. I did not even need to bring our the hand mixer nor the bulky Kitchenaid. If a recipe calls for bringing out the bulky Kitchenaid, then I'm almost immediately turned off. I hate taking that thing out! I only use it myself if I absolutely need to try a recipe or bake something from scratch.

I actually have not baked from scratch for quite a while now. Why should I when there are mixes/pouches readily available? I understand that they are not quite as good as homemade goodies but sometimes when you're just craving for something sweet, they do well.

My mom, on the other hand, just loves to cook and bake. Maybe some of her recent baking had inspired me. Who knows? I found this wonderful oatmeal thins recipe(again on the internet) that I gave her. She immediately tried it. It turned out quite lovely! Yummy, with a capital Y!

That's a problem for me because I just can't seem to stop eating it! LOL! DH has been teasing me with references to my weight, exercising, even diet pill reviews like Apidexin review in the hope that I get annoyed enough to actually start doing something about my weight gain. Sigh...my husband does not seem to know me well enough in this department. He had suggested that I buy an outfit that is a size lower than I usually am so that I'd be motivated to get into that size. Not really a big motivation for me. I was telling him that what I need is a workout buddy. If exercising becomes a social activity for me, then you know that I am so there!!! Anyone nearby who wants to be my workout buddy, just let me know! LOL!

From the Kitchen of Mrs.G

My mom had a small business back in Manila selling baked goodies. Everything was baked to order. I believe that her bestseller was her rum cake. It really is very good even if personally, it isn't my favorite. Her customers were usually her own friends or friends of my brothers. That's usually how businesses start, don't they?

Now that she is here, she's exploring the possibility of continuing this small business. I don't know how far she's willing to go. I think it is possible but will require more work from her than what she was used to back in Manila.

Re: products, I found a recipe for oatmeal crisp cookies that could hit it big. She tried the recipe earlier today. It was good but still needs some tweaking. If she perfects this, it would be awesome!

How cool would it be to have it go big enough so that the business can accept credit card payments too? huh-huh-huh! There are portable credit card machines that small businesses use right?

That's going too far ahead now...still, it never hurt to dream.

One more reason to go organic

So, I was talking to my friend a few weeks ago and learned that she has developed an allergy to chicken when she moved here to the US. She used to eat chicken all the time in the Philippines with no problem. In fact, when she goes home to the Philippines, she eats chicken there and does not have any allergic reaction at all!!!

Our hypothesis for this would be the kinds of feeds being given poultry here. Or maybe even hormones possibly being injected into their systems. I've heard that cows are being injected hormones which makes them grow bigger and produce more dairy products. But it would be safe to assume that this causes a negative effect too. One effect I've read is that the meat and dairy products from these cows have less CLA content which is an essential fatty acid beneficial to us.

If you've developed an allergy to a certain food, try going organic and see if this helps.

Organic foods are more naturally grown. But they are more expensive too - which is a bummer for money-conscious moms like me. I'm slowly trying to incorporate more organic products into my grocery list. Oftentimes though, cost prohibits me from doing so. Feeding 8 people healthy meals is not an easy thing to do when you're on a tight budget.

Recipe Exchange

The MoMs group that I am a member of is hosting a recipe exchange next month. We've invited other moms in our community to join us. We are planning to share some really quick and easy recipes. As moms, we know that preparing home-cooked meals is so difficult with the busy skeds of families nowadays.
I'm contributing 2 recipes: chicken satay for the chicken dish and Chocolate croissants for the dessert dish.
Someone else is taking care of the veggie, beef and fish dishes. I am not sure right now what recipes they will be sharing. I think we have yet to finalize our appetizer recipe. I don't often make appetizers so my cache of easy appetizer recipes if almost non-existent.
I'm really looking to this. I think it's going to be a lot of fun!!

Cutie alert

I just had to post this here. I don't know how many of you look at my daily photos at the photoblog but this was my photo for last Wednesday. This is DD3 smushing her way through a banana! Yes, she eats through a whole banana for her snack. And she likes to hold it herself. Plus, she likes to have the peel on so she can hold on to it. If you dare take it from her, you'd hear a loud wait that is sure to rattle your ear drums. I tried taking the peel off completely to help her get to the banana but she kept pointing to the peel -as if that would give her more banana to nibble on! LOL!

If you look closely, you'll see me in her gorgeous eyes.

Sigh...I just super like looking at this photo. You know when you're taking a photo, you look at it and say to yourself, "Self, that was a pretty good shot!" Well, this is what the photo is to me. I'm pretty happy with everything about it, the composition, exposure, her expression... and this is straight out of the camera. No editing aside from putting the watermark and resizing for the web!

I've got a 7-yr old!

How can I have a 7-yr old son? Was he not just a toddler yesterday? And now, he looks, well...like a boy! And he's even lost 2 of his lower incisors already. How can he be growing up so soon?!
Anyhoo, yesterday was his birthday. He had his cub scout den meeting after school so I brought pizza to share with his den. Boy, did the boys devour it! I was going to take pics. I took my Nikon with me but I just had no time to take pics. The moment the boys came to the tables, I started to hand out slices. Soon after, they were all done and had to go back to the room for their activity.

For dinner, DS chose to have In N Out. Not a problem with me! LOL! We were going to go to Riverside so that MIL and SIL could join us but the winds were so strong, DH decided to just go to the one near our place. DS can finish one whole cheeseburger, no problem - plus fries and a chocolate milkshake. His appetite sure is following the appetites of his dad and uncles! LOL!
It was a good dinner, for sure. In N Out is always a winner.

When we got home, we gave DS his present. Look at his reaction when he opened it. Y'think he liked it? LOL! It's a Wii game, btw. We let him play with it for a little bit before going to bed.

As for DH, he took DD2 with him last night(yes, after dinner) and they picked up the car they bought for MIL. He took it home with him last night so he could make sure it worked fine. I think it would be a good idea to put together a first aid/tool kit(flashlight, safety utility knife, wipes, etc) for MIL so she's sure to be safe when she's out.

Back with some Christmas crafts

I know I've been away. Life has a way of getting in the way of blogging. LOL! I've been seriously plugging away at my Christmas to-do list and the end is near! It should be since Christmas is less than a week away! LOL! I've still 2 people (MIL and BIL) I've no gifts for but at least everyone else is done.
Today is the last day of school for DS so presents to his teachers and classmates are done. Tomorrow is DD's class Christmas party. Teacher gifts are done, 5 more packs needed for her classmates'.
I've really been busy and I've got pics to show for it! Hahaha - evidence that will hopefully excuse my absence from this blog. LOL!

First off are these cake ball trees I made. I gave these away to some tito's and tita's. I had originally planned on making 8 of these but quickly realized that I was running out of time. I was doing this the night before the Christmas party. I had baked 2 pans of brownies to use and thought that it was going to be enough. But no... I had to bake another pan of cake then only got to make 5 instead of 8.
Of the 5 trees I made, 3 were mini trees pictured here. I had to cut the styro cone in half so I would need less cake balls. This was a fun gift to make if I had carefully planned and timed everything, instead of doing it at the last minute!

(See my gallery for the credits)

My next project were these candles. I gave these away to some friends. I experimented a couple of times with my own candles before taking the plunge and making them as presents. I initially just used a regular blow dryer to heat and melt the wax but discovered it was too unpredictable. I caved and bought a heat gun, the ones used for embossing and stuff. Good thing I had a 40% off coupon from Michael's. I foresee making these often because they are really soooo easy to do! I followed the tutorial here. Some tips: Go real easy on the spray adhesive. I sprayed liberally the first try and I tore some of the paper trying to get it out of the cardstock. I printed using the draft setting of my printer. Use light-colored candles. I made the mistake of using a dark red candle and the design could hardly be seen. If I did not melt the design into the candle, it would not have been a problem.

These next crafts were the teacher and classmate gifts. I was inspired and followed the tutorial of Emily Giovanni found on her blog. I am so excited about how the beaded pen came out! It's super cute, if I may say so myself! The little Hershey's nuggets are so cute too, don't you think? My own kids were all begging to have some and when I told DD2 to eat one of the undecorated ones, she insisted she wanted one of the decorated ones. I suppose it's yummier when it's cutely wrapped, huh?

This last one is another teacher gift. I found this carousel at Target. I just designed 4 4x6 prints to go in them and voila! a personalized gift! I've also put in beaded pens to go in there. I figured, teachers always need pens and something to put them in, right? I went with an ocean theme because that is how she decorated her room this year.

That ends my craft showcase for today. LOL! That's what's kept me busy this past week and a half. Oh, there is another present I made for my kids' godparents but I'm not posting them yet since I know that at least one of them checks in here sometimes. ;)

BTW, please excuse the varying quality of photos I've posted. These are all SOOC(straight out of camera) with no editing and I'm still experimenting with my manual settings in getting the right exposures on my own. As you see, some have the right exposure, others are underexposed. I find that I seem to underexpose my photos more times that over expose them.

A Culinary Arts Post

One of my fave reality shows is Top Chef aired on Bravo. They've had 3 seasons now, I believe and I've been a fan since season 1. I still think Harold from Season 1 is the best of the 3 winners so far. I like food. I like good food but I don't think I'm passionate enough about it to really pursue it as far as to go to culinary school for it. I don't have the discipline for it, I think. LOL! I know someone though who went to the California School of Culinary Arts in Pasadena. This mommy friend of mine was working full-time at night while she went to school during the day. She took the Patisserie and Baking Program. You can check it out at http://www.csca.edu/ and you'll see that it is an intense program. I thought she was crazy for doing that. I've hardly seen her since. The last time I saw her though, I could see she was tired but when we started talking about her classes, she got invigorated. She was so animated that I knew that she was really following her passion so she did not mind the sacrifices she had to make to get this to work. She was telling me about some of the coursework they've had to do. She really loves getting to create recipes of her own. But she also complained that she was starting to gain weight because well, they sample each other's works! Now, that, I can do! LOL!

Steel cut oats

In my quest to learn to live a healthier lifestyle, I've started to take brown rice instead of white and to have oatmeal for breakfast. I've never been a breakfast kind of girl. When I was a school girl, the school bus came to me really early and I'd just skip breakfast. It was a bad habit that has stuck with me. Now, I know breakfast is the most important meal of the day but usually, I am just too lazy to get up early enough to prepare something nutritious. The kids usually have their cereal - Life or Honey Bunches of Oats - or toast with butter. They also really like instant oatmeal. I, on the other hand, don't like the texture of regular rolled oatmeal. It's just too mushy for my taste.

Then, a couple of weeks ago, I came across a thread over at DST about steel cut oats. Someone shared a crockpot recipe for it. I tried it and yes! I've found oatmeal I like! I prefer the texture of steel cut oatmeal. It's meatier, almost rice-like. I'm not sure how to describe it but I think it's almost like eating "champorado" only it's oatmeal. I made a batch of the crockpot oatmeal last Friday, and well, as of this morning, it's almost all gone. I've kept the whole batch in the fridge and just heat up a little at a time each morning. I've only tried mixing some brown sugar with it. The kids prefer regular sugar.

All the extra fiber I've been packing into my diet lately has been having an effect on me already. I haven't lost weight - not that I expected to - but I know that I've started to eat less now. I just feel fuller and not as hungry.

Here's the crockpot recipe for Creamy oatmeal for those who are interested:

2 c steel-cut oats (NOT instant)

3.5 c FF evaporated milk

3.5 cups water

Cook on low for 4-6 hrs.

Quite easy, don't you think?

Menu Plan for Week of Aug. 6 - Aug. 12

This is going to be an easy week because we have events planned for some evenings.

Monday
Beef Fajitas
I still have leftover tortillas for last week's chicken enchilada so I'm using those this week. There was a sale over at Superior that made the 2 doz pack of corn tortilla cheaper than the dozen pack of flour tortillas I usually get, hence the leftover tortillas.

Tuesday
Chicken Cacciatore

Wednesday
Pork Sinigang
The kids love sinigang. It's a Filipino dish that uses tamarind broth. It's tangy and salty - just yummy!

Thursday
DH's graduation so we're eating out! Haven't decided where yet, although it will most probably be somewhere near his school already. The ceremony starts at 6 pm so the earliest it will end will probably be 7 pm. I'll have to remember to bring some snacks for the kids, just enough to tide them over until dinner time.

Friday
We're meeting at our friend's house in Diamond Bar. About 2x a month, we meet with 3 other couples on Friday nights at each other's homes. It's our support group, a way to encourage each other in our marriages, our personal relationships with God. We talk, we pray, Bible studies sometimes...stuff to help us draw closer to Him. Such an essential part of our lives, I think.

Saturday
Celebrating the Lord's Day. Our group from Friday is part of a larger Catholic Charismatic community called City on the Hill. This Saturday, we are having a larger assembly to celebrate the Lord's Day.

Sunday
Alaskan salmon
I bought this ready-to-grill salmon fillets at Costco. It's so convenient since it's marinated already and all you need to do is pop it into the grill.
