Menu Plan for Week of Aug. 6 - Aug. 12

This is going to be an easy week because we have events planned for some evenings.

Monday
Beef Fajitas
I still have leftover tortillas for last week's chicken enchilada so I'm using those this week. There was a sale over at Superior that made the 2 doz pack of corn tortilla cheaper than the dozen pack of flour tortillas I usually get, hence the leftover tortillas.

Tuesday
Chicken Cacciatore

Wednesday
Pork Sinigang
The kids love sinigang. It's a Filipino dish that uses tamarind broth. It's tangy and salty - just yummy!

Thursday
DH's graduation so we're eating out! Haven't decided where yet, although it will most probably be somewhere near his school already. The ceremony starts at 6 pm so the earliest it will end will probably be 7 pm. I'll have to remember to bring some snacks for the kids, just enough to tide them over until dinner time.

Friday
We're meeting at our friend's house in Diamond Bar. About 2x a month, we meet with 3 other couples on Friday nights at each other's homes. It's our support group, a way to encourage each other in our marriages, our personal relationships with God. We talk, we pray, Bible studies sometimes...stuff to help us draw closer to Him. Such an essential part of our lives, I think.

Saturday
Celebrating the Lord's Day. Our group from Friday is part of a larger Catholic Charismatic community called City on the Hill. This Saturday, we are having a larger assembly to celebrate the Lord's Day.

Sunday
Alaskan salmon
I bought this ready-to-grill salmon fillets at Costco. It's so convenient since it's marinated already and all you need to do is pop it into the grill.
