Steel cut oats
In my quest to learn to live a healthier lifestyle, I've started to take brown rice instead of white and to have oatmeal for breakfast. I've never been a breakfast kind of girl. When I was a school girl, the school bus came to me really early and I'd just skip breakfast. It was a bad habit that has stuck with me. Now, I know breakfast is the most important meal of the day but usually, I am just too lazy to get up early enough to prepare something nutritious. The kids usually have their cereal - Life or Honey Bunches of Oats - or toast with butter. They also really like instant oatmeal. I, on the other hand, don't like the texture of regular rolled oatmeal. It's just too mushy for my taste.Then, a couple of weeks ago, I came across a thread over at DST about steel cut oats. Someone shared a crockpot recipe for it. I tried it and yes! I've found oatmeal I like! I prefer the texture of steel cut oatmeal. It's meatier, almost rice-like. I'm not sure how to describe it but I think it's almost like eating "champorado" only it's oatmeal. I made a batch of the crockpot oatmeal last Friday, and well, as of this morning, it's almost all gone. I've kept the whole batch in the fridge and just heat up a little at a time each morning. I've only tried mixing some brown sugar with it. The kids prefer regular sugar.
All the extra fiber I've been packing into my diet lately has been having an effect on me already. I haven't lost weight - not that I expected to - but I know that I've started to eat less now. I just feel fuller and not as hungry.
Here's the crockpot recipe for Creamy oatmeal for those who are interested:
2 c steel-cut oats (NOT instant)
3.5 c FF evaporated milk
3.5 cups water
Cook on low for 4-6 hrs.
Quite easy, don't you think?

I don't have the slightest idea what steel-cut oats are. I'm wondering where I can buy a pack or two over here to give it a try.
I'd never heard of it till lately either. On the can I had bought, it said something about Irish porridge.
