Menu plan for July 30 - August 5

Here's what's cooking in our home this week...wanna share yours?

Monday
Salisbury steak (we were supposed to have this last week but did not get the chance to prepare it because we made an unexpected trip to MIL's)

Tuesday
Chicken Enchilada
I'm using Robin Miller's quick and easy recipe at Food Network

Wednesday
Stracoto with Porcini mushrooms

This is Giada de Laurentiis' recipe from her show on Food Network. It is soooo easy and sooo yummy! The recipe tells you to puree the pan juices and veggies in the end. I don't. The kids actually like having the chunks of veggies and mushrooms.

Thursday
Guinisang monggo and fried fish

Monggo is a Filipino dish - one of my Dad's favorites. It is some sort of comfort food. It's a humble, no frills kind of dish. Its main ingredient is the green mung bean. It is first boiled then sauteed with garlic, onions, shrimp then shrimp broth is added. I don't fry the fish myself. I go to the nearby Filipino store and buy my fish there and they fry it for free. We usually have get the whole tilapia or some smelt. Yummy!

Friday
Lumpiang Shanghai with crab and corn soup

This is more commonly known as egg rolls here. I use ground turkey instead of ground pork for a healthier alternative. It's still fried though! LOL!

Saturday
Chicken Satay with a side of green salad

I use this recipe I got from a box of Lipton Onion Soup. You just never know what gems are hidden in those packages. I don't bother with skewering these though. It's just a hazard for the kids. They still turn out yummy!

Sunday
Pork Estofado
