I usually cook dinner for the family 6 out of 7 days in a week. That depletes my recipe stash quickly. And I really do not want to repeat the same kind of dinner week after week. I try not to duplicate a meal within a month. Crazy? I suppose so but it's really because I want to introduce my kids to a wide array of foods. So easy and quick recipes always catch my eye.My current fave recipe is my chicken satay. It is so simple and easy. For about a lb of boneless chicken, mix together 1/4 cup of olive oil, 2 T of peanut butter, 2 T of brown sugar and 1 pouch of Lipton onion soup mix. Rub this onto your chicken. I usually cut my chicken into strips. Let it marinate for at least 30 minutes. Then grill. That simple! And soooo yummy!
